Ingredients

  • 4 medium beetroots, washed and trimmed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Wash and trim the beetroots, leaving the skin on.
  2. Boil the beetroots in water for 30-40 minutes until tender, then drain and let cool.
  3. Peel and slice the beetroots into rounds or cubes.
