Ingredients

  • 2 large cucumbers, thinly sliced
  • 2 ripe avocados, diced
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste
  • Optional: 1/4 tsp red pepper flakes for a spicy kick

Instructions

  1. Prepare the cucumbers by washing and thinly slicing them. For less wateriness, lightly salt slices and pat dry after 10 minutes.
  2. Dice avocados into bite-sized pieces and toss with lemon juice to prevent browning.
  3. In a large bowl, combine cucumbers, avocados, red onion, and cilantro. Drizzle with olive oil and toss gently.
  4. Season with lemon juice, salt, and pepper. Add red pepper flakes if desired. Toss lightly and serve immediately.
