- 2 ripe avocados, diced
- 1 small red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- Salt and pepper to taste
- Optional: 1/4 tsp red pepper flakes for a spicy kick
Instructions
- Prepare the cucumbers by washing and thinly slicing them. For less wateriness, lightly salt slices and pat dry after 10 minutes.
- Dice avocados into bite-sized pieces and toss with lemon juice to prevent browning.
