Spinach and Feta Quesadillas (20 minutes)

  • Total Time: 20 minutes

Description

Spinach and Feta Quesadillas: A Crispy, Cheesy, and Quick Meal in 20 Minutes! Packed with fresh spinach, creamy feta cheese, and wrapped in a crispy tortilla, this dish is perfect for lunch, dinner, or a party appetizer. Easy to customize and ready in just 20 minutes!

Ingredients

Scale
  • 4 large flour tortillas
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • ½ cup shredded mozzarella cheese (optional, for extra meltiness)
  • 1 tbsp olive oil or butter
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • Sour cream or Greek yogurt for serving (optional)

Instructions

  1. In a bowl, combine the chopped spinach, crumbled feta cheese, mozzarella (if using), garlic powder, oregano, salt, and pepper. Mix well to ensure the flavors are evenly distributed.
  2. Lay a tortilla flat on a clean surface. Spread half of the spinach and feta mixture evenly over one half of the tortilla. Fold the other half over to create a half-moon shape. Repeat with the remaining tortillas and filling.
  3. Heat a large skillet over medium heat and add a drizzle of olive oil or butter. Place the assembled quesadillas in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy. Press gently with a spatula to help the cheese melt.
  4. Remove the quesadillas from the skillet and let them cool for a minute. Slice into wedges and serve with sour cream, Greek yogurt, or your favorite dipping sauce. Enjoy immediately while warm and crispy!

Notes

  • Use fresh spinach for the best texture. If using frozen, make sure to drain excess water.
  • Add extra veggies like diced bell peppers, onions, or mushrooms for enhanced flavor and nutrition.
  • Preheat the skillet to ensure a crispy exterior without overcooking the filling.
  • Customize the cheese by adding goat cheese or ricotta for a creamier texture.
