- 4 large bell peppers (any color)
- 1 lb ground beef (or turkey for a lighter version)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup cooked rice (optional)
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded Mexican cheese blend
- Fresh cilantro for garnish
- Sour cream and salsa for serving
Instructions
- Cut tops off bell peppers, remove seeds and membranes. Rinse and set aside.
- Brown ground beef with onions and garlic in a skillet. Drain excess fat.
- Add taco seasoning according to package directions. Stir in black beans and corn.
- Mix half the cheese into the taco filling. Spoon mixture into prepared bell peppers.
- Top each pepper with remaining cheese and bake at 375Β°F for 25-30 minutes.
- Garnish with fresh cilantro and serve with sour cream and salsa.

- For crisp-tender peppers, bake for 20 minutes. For softer peppers, bake up to 35 minutes.
